The recommended load of X-Oven’s charcoal for the X-Oven.2 model is

For a service exceeding 6 hours
, the Manufacturer suggests to re-load
the Brazier tray after about 4 hours from ignition. We advise to wait about 30
minutes from re-load before starting to cook again.
If the
service is performed twice daily
(i.e. lunch and dinner), the Man-
ufacturer suggested to load 4 Kg. of X-Oven’s charcoal for lunch and an ad-
ditional 4 Kg. for dinner (to be added on top of the charcoal residue from
lunch). We advise to wait for about 30 minutes from re-load before starting
to cook again.
The Manufacturer underlines the fact that the information supplied regarding
the quantities of charcoal to be used and the expected service time were cer-
tified with the use of X-Oven’s charcoal, see
Charcoal
. The use of a different
charcoal could considerably influence the performances of the product, the
amount of charcoal to be used and the duration of service.
RECOMMENDED USE
The X-Oven.2 allows to cook simultaneously a variety of food, of various cut
sizes at different cooking temperatures.
The operator can adjust the heat intensity in different ways:

The knob on the
Brazier lifting cart
allows to move the Brazier tray closer
or further away from the grills

The food can be placed on
two different Grill drawers
at various distanc-
es from the Brazier tray
•
The
Air inlet valve
can be opened or closed to speed up or slow down
combustion
Moreover, the operator has the possibility to use the
Brazier tray load
splitter
, see

, to practice special cooking techniques, such as
hot-
smoking
or
indirect cooking
. The capacity of the Brazier tray is partialized
and the charcoal load reduced, therefore the result is to free a portion of the
grills of the Grill drawers above from direct heat.
