Pasta without Eggs
Ingredients:
Udon Noodles
350 g all-purpose plain flour
140 ml cold water
20 g salt
Preparation:
Stir the salt into the water until dissolved.
For preparation see plain pasta (basic recipe). Just replace the beaten
egg with the salt water.
Pass the dough mix through the pasta disc and cut into suitable lengths.
Cook the noodles in unsalted boiling water for approximately 5 minutes.
The noodles should be firm but tender. Drain immediately and rinse in cold
water. Serve immediately with a sauce of your choice.
