Plumbing: water supply
Warning
A shut-off valve and a mechanical filter should be positioned between the water mains and the appliance.The
appliance is supplied with 2 metres of piping at the corresponing attachment (3/4”) with non-return valve and
mechanical filter, between the steam systems of oven and holding cabinet.
Before connecting the water pipe to the appliance, flush it out with water in order to eliminate any residue which
has accumulated inside it.
The pressure value of the water supply at the inlet should be between 150 and 400 kPa; its temperature must
be no higher than 30°C.The appliance has an internal pressure reducer which is calibrated to 2 bar, in order to
ensure the correct amount of steam is produced by the STEAM.Maxi™ system, thereby guaranteeing optimal
cooking results.
If the pressure of the water supply at the inlet is too low, a pump with a suitable flow rate should be used.
If connection to the water mains is not possible, the steam circuit of the holding cabinet can be fitted with the
XC665 kit, which draws distilled water from a jerry can or another type of container.
The water connection must be done only through the tube and connector supplied with the appliance and
other types of existing connections cannot be used for the installation.
Water supply quality
The water supplied to the STEAM.Maxi™ circuit must have a maximum hardness of 100 μS/cm.
The use of a deioniser (reverse osmosis) is strongly recommended, in order to prevent limescale and/or other
mineral deposits from building up inside the holding cabinet. As such, you may take the opportunity to use the
UNOX reverse osmosis system, code XC235, which is directly controlled by means of a self-diagnosis system
implemented by the electronic control panel of the oven.
User recommendations
Any damage caused by limescale or other chemical agents carried by the water is not covered by the guarantee.
