Cherry and walnut muffins
Ingredients (makes approx. 12)
150g plain flour
150g wholemeal flour
2½ tsp baking powder
½ tsp salt
50g brown sugar
75g glacé cherries
50g chopped walnuts
1 egg
225ml milk
50g melted butter
Method
• Place flours, baking powder, salt, sugar, cherries and walnuts in a bowl and
mix well.
• In a separate bowl, whisk together the egg, milk and butter.
• Stir the egg mixture into the dry ingredients and mix well.
• Spoon the mixture into a greased 12-mould muffin tin. Place the mould on the
baking plate in the microwave oven and close the door.
• Press the CONVECTION pad, then press number pad 0 and bake at 200°C for
25 minutes.
• Cool slightly before turning out.
