Grilled lamb chops with apricots
Ingredients
(serves 4-6)
8 lamb chops
400g can apricot halves
Marinade
3 tbsp oil
1 tbsp red wine vinegar
Syrup from the canned apricots
Salt and freshly ground black pepper
2 chopped spring onions
Parsley sprigs to garnish
Method
• Mix all the marinade ingredients together and pour into a shallow ovenproof
dish.
• Add the lamb chops, making sure they are well coated with the marinade.
• Marinade the chops for at least an hour, turning and basting frequently.
• Arrange the apricot halves around the chops, place the dish in the microwave
oven and close the oven door.
• Press the GRILL pad, then use the number pads to enter a grilling time of 8:00
minutes. Press START.
• At the end of the set grilling time, turn the chops over and enter a further
grilling time of 5:00 minutes.
• Cook until tender, extending the cooking time, if required.
