Vegetable bake
Ingredients
(serves 4-6)
450g carrots, sliced
450g new potatoes, sliced
450g cauliflower florets
450g broccoli florets
1 medium onion, chopped
50g butter
50g plain flour
600ml milk
Salt and freshly ground black pepper
175g cheddar cheese, grated
Method
• Place carrots, potatoes and 2 tablespoons of water in a large, microwave safe
bowl. Cover.
• Microwave the vegetables for 7 minutes on 100% power, stopping and stirring
once in the middle of the cooking time.
• Add the cauliflower, broccoli and chopped onion and microwave for a further
5 minutes until cooked.
• Take the bowl out of the microwave oven and let the vegetables rest, covered.
• Meanwhile, place the butter in a microwave safe jug and microwave for 50
seconds. Take out of the oven, blend in the flour and whisk in the milk until
smooth.
• Cook on high for 3 minutes, stopping and stirring frequently. Season to taste.
• Drain all the water from the microwaved vegetables, then place them in an
ovenproof dish. Pour over the white sauce and sprinkle with the cheese.
• Place the dish in the microwave oven and press the GRILL pad. Use the
number pads to enter a grilling time of 5:00 minutes.
• Close the door, press the START/QUICK START pad and grill the vegetables
until browned.
