First heat the skin of the washed duck with steam (“Steamed poultry” process) and then brush several
times with a glaze made from honey, vinegar and water. Then leave to dry in a cool place for several hours,
ideally beside a fan. Then finish the preparation using the above setting.

Chinese pancakes and strips of deseeded cucumber and spring onions are traditionally served
separately with the Peking duck. Commercially-available hoisin sauce is also served with it.
Chinese pancakes
0.7 lbs. (310 g) wheat flour
2 tsp caster sugar
1 qt. (250 ml) boiling water
1 tbsp sesame oil
Knead the flour, water and sugar to make a stiff dough, then leave to rest for about 30 minutes. Roll
out the dough into 3” (8 cm) circles and brush with sesame oil. Then cook the dough circles in the
Multibaker (see page 54).
