Pumpkin soup
Preparation time: 55 minutes
Serves 6
For the soup
750 g pumpkin | just the flesh | diced
1 onion | diced
125 ml milk, 3.5% fat
375 ml vegetable stock
1 ½ tsp. salt
2 tsp. sugar
1 tbsp. butter
1 tbsp. crème fraîche
Pepper
For decorating
6 tbsp. cream
1 tbsp. pumpkin seeds | coarsely
chopped

Glass dish with lid, microwave safe,
23 cm
Preparation
Place the pumpkin flesh and diced
onion in the glass dish.
Add the milk, vegetable stock, salt and
sugar; then stir. Place on the glass tray
and place in the oven. Start the
Automatic programme or cover and
cook using the settings indicated for
cooking stage 1.
Manual:
Stir the soup; cover and cook using the
settings indicated for cooking stage 2.
Automatic programme:
Stir the soup; then re-cover and
continue cooking.
Purée the soup, adding the butter and
crème fraîche. Season with pepper to
taste.
Before serving, decorate the soup with
the cream and pumpkin seeds.
