CHAP.5 – MAINTENANCE 

WARNING:  Before  carrying  out  any  maintenance  operations  make  sure  that  the  machine  has 
been disconnected from the main electrical supply. 
Read the instructions given here carefully, following them step by step.  

5.1 Standard maintenance 
5.1.1 Cleaning the oven 

INTERNAL CHAMBER
- Build up of grease or other food residue inside the oven can constitute a fire hazard and so 
particular attention must be paid when cleaning the inside of the oven.  

Use a metal brush with a long enough handle to brush the decks throughout the day. Use a soft 

bristtle brush to get the particles out. Usea scrapper for caked-on particles. NEVER use water.

- No harsh cleaning agents or acid substances must be used on the coating inside the chamber but 

you can 

use a damp cloth

.

 

EXTERNAL GLASS

All 

 

Front Glass except the Control Panel must be taken off and cleaned 

once a month

Don’t use 

chemical agent for cleaning the glass. 

Clean the stainless surfaces behind the glass.

-  Be  very careful  not  to clean  and/or  wet  the tempered  glass door  while  still  hot  as the  sudden 
drop of temperature could cause it to fracture.

 clean the air vents on the panels and check that the smoke/vapour outlet is working 

efficiently.  
-  When cleaning the outside of the oven take special care when cleaning around the controls. Not 
to allow water to come in contact with the electrical components or to filter through inside the 
oven frame. 

STAND and WHEELS

Brush the wheels on regular basis

 - Not to use  any acid substance for cleaning the stand and the 

wheels.

HOOD’S GRILL

-  When cleaning the hood’s grill take special care when cleaning around the controls. Not to allow

frame. 

The grid must be removed and the motor must be inspected 

every 6 months 

to prevent possible 

blockage
