INGREDIENTS FOR 4 PEOPLE:
300g Delizie dal Sole dried chickpeas, 1 Foglia Verde red
onion, 1/2 clove of garlic, 1/2 teaspoon cumin, 2 tablespoons Podore del Conte extra virgin
olive oil, chickpea flour (if needed), 1 handful of parsley, Don Jerez salt and pepper to taste,
Collina d’oro peanut oil as needed
PREPARATION:
Leave the dried chickpeas to soak in plenty of cold water for at least 12
hours. Drain them and dry with kitchen paper. Place them in the mini chopper together with
the onion, garlic, cumin, parsley, salt and pepper. Run the mini chopper until you have obtai-
ned a paste. Spread the mixture into an oven dish and leave it to rest for 30 minutes. Use a
tablespoon to remove uniform portions of the mixture, and with your hands form them into
slightly flattened balls. As they become ready, fry them in plenty of hot oil. Remove onto
kitchen paper and serve. You can serve the falafel with a yoghurt sauce or mayonnaise.
