2-Step chilling
With all these 3 options you can use the 2-step chilling. The chilling starts with tap water. The
water goes to the drain after the chilling.
In the beginning the food temperature is 90°C or even more. The jacket temperature may be
over 100°C. The chilling starts with tap water.
First the incoming chilling water mixes with the jacket water and heats up from the food
temperature through the stainless steel of the kettle. The water heats up to 70°C or more and
is then led to the drain. The temperature goes down to reasonable temperatures in minutes.
However, it is recommended to use stainless steel drain instead of plastic with chilling kettles.
When food temperature has reached the set value, e.g. 40°C, the chilling with tap water stops
and chilling with cold chilling water starts.
This way you can save some of the ice banks chilling energy when the hot water from the chill
start is directed to the drain instead of the ice bank. (In the beginning the return water is 70°C
or more.
If you do not use the 2-step chilling, the chilling procedure is faster, but at the same time you
lose quite a lot of the Ice Bank ice, when the hot 70°C return water goes to the chilling system.
Chilling options
In standard model
chilling media is tap water. Chilling water exit to floor drain. In addition the kettle may be
equipped with a Chilling water connection.
For closed chilling system
there are 2 options:
• CH4 CHILLING - The return water is led back to the “Ice Bank” using the incoming water
pressure. This is why the chilling installation (Ice Bank) must be immediately at the side of
the kettle or downstairs just under the kettle. The return piping may not have any counter
pressure at all.
• CH5 CHILLING - The kettle is equipped with a return water tank and a return water pump.
The return line must be Ø40 mm and max distance to the chilling system approx 20 meters
when using the standard pump.
Fill rate
It is recommended to use maximum fill rate of 70% when chilling. If the fillrate is higher, the
mixing may be difficult with high speeds and the chilling time may go over the target.
