CHAPTER 5 CLEANING
A. SHUTDOWN AND CLEANING
•
Perform the Shutdown and Cleaning Procedure at the end of each shift or more often if
needed.
Shutdown and Cleaning Procedure for the End of Each Shift:
1.
Turn OFF the ON/OFF Switch.
2.
Open the cooking compartment doors and allow the appliance to cool.
3.
Make sure an empty drain pan
(4” X 12” X 20”) is in the drain pan guides and drain the steamer by
turning the drain handle to the drain position.
•
The drain pan should have the front edge pulled out just enough, so that the drain empties fully
into the drain pan. Having the drain pan pushed back too far into the rack or pulled out too far
from the rack can cause spilling or tipping of the drain pan.
4.
Remove the slide racks. Wash and rinse them according to health and sanitation requirements.
5.
Remove the splash pan (perforated pan at the bottom of the cooking compartment). Wash and rinse it
according to health and sanitation requirements.
6.
Remove spilled food from inside the compartments. Use a soft bristle brush to remove stuck food.
7.
Clean the interior of the compartment thoroughly.
•
Do NOT use abrasive cleaning compounds or steel wool.
ELECTRIC SHOCK HAZARD
Do not clean this appliance with hoses or water jets!
Doing so can cause injury and equipment damage.
HIGH HEAT HAZARD
Wait for this appliance to cool before cleaning!
Attempting to clean a hot appliance can cause
DEATH, INJURY, BURNS, and SCALDS.
BURN AND SCALD HAZARD
Water in the reservoir and drain pan may be HOT!
Use caution when draining and emptying to avoid spills and splashes.
Failure to do so can cause
DEATH, INJURY, BURNS, and SCALDS.
