Problems

Baking/food turns out too dark or
unevenly baked.............................
Remedy
Temperature too low. The baking rises
and then collapses again. Use a higher
temperature.
You have used too little yeast or baking
powder. Check your recipe to see
whether you have used enough.
The fat/liquid mixture was too warm.
The temperature must be 37˚C for fresh
yeast and 45-50˚c for dried yeast.
Temperature too low. The baking
needed too long in the oven before it
was ready. Use a higher temperature.
Too little liquid, too much flour or the
wrong type of flour can result in dry
bread. Remember not to add all the
flour at once, as the quantity of flour
required can vary from time to time.
Wrong positioning in the oven when
using the fan oven means that the air
cannot circulate properly. Arrange
rolls etc. in straight rows. Place
rectangular items such as baguettes,
oblong cakes etc. with their narrow
ends towards the rear wall and the oven
door.
