3.

 

Flue and other exterior surface: 

a.

 

Take  off  the  flue/splashback,  and  clean  the  flue,  and  other  exterior  surfaces  of  the  Gas 
Oven with warm water and mild detergent solution using a soft sponge.

Griddle plate (For GL174 units): 

a.

 

Turn  OFF  the  burner.    Do  not  start  your  cleaning  process  while  the  griddle  plate  is  still 
very  hot.    Allow  the  griddle  to  cool  down  first.    However,  it  is  best  to  clean  the  griddle 
while it is still a little warm.  Be sure to wear heat insulated elbow length gloves, an apron 
and a closed protective eyeglass before cleaning.  Be cautious and use slow and deliberate 
motions to prevent burns while cleaning the griddle when it is hot or warm. 

b.

 

Pour  a  little  amount  of  vegetable  oil  on  the  griddle  plate  while  it is  warm.    Then,  use  a 
griddle  scraper  to  scrape  off  accumulated  carbon  deposits  or  heavy  food  debris  which 
have baked on the griddle.  Once you have scraped off the heavy food debris, slide it to 
the grease trough using your griddle scraper. 

c.

 

Then, use a mild abrasive scouring pad to remove and loosen the remaining food residue 
on the plate.  Rub the scouring pad along the grain of the plate.  Do not rub the scouring 
pad in a circular motion as it will mar the finish of the plate. 

d.

 

Then, use a mild detergent and warm water to wash off the remaining oil and food debris 
on the griddle plate.  Use warm water and thoroughly rinse off the oil and water residue 
from the griddle plate. 

e.

 

Then, thoroughly dry the griddle plate using clean paper towels. 

f.

 

Pour a little amount of vegetable oil over the griddle surface.  Using a spatula, spread the 
oil throughout the entire griddle surface.  This will prevent rusting and prolong the life of 
the griddle plate. 

 

5.

 

Oven racks and drip tray: 

a.

 

Allow the oven to cool down first. 

b.

 

Remove the racks and oven drip tray. 

c.

 

Scrape off any food splatter which have baked on the oven racks and drip tray. 

d.

 

Rinse both the rack and drip tray with warm water and dry with paper towels or soft cloth.

WEEKLY CLEANING: 

1.

 

Trivets and Burners: 

a.

 

Remove the trivet/s from the equipment. 

b.

 

Loosen the burner lock screws, then remove the burner. 

c.

 

Scrape off the caramelized or carbonized food debris from the trivets and burners using 
soft  bristled  wire  brush  or  copper  brush.    Ensure  that  food  debris  that  was  scraped  off 
from the burner shall not go inside the burner port holes.  If any food debris went inside 
the burner, it must be taken out to prevent clogging of the burner. 

d.

 

Wash  the  trivets  and  burners  with  warm  water  and  mild  detergent  solution.    Then, 
thoroughly rinse the mild detergent with warm water. 

 
 

b.

 

Rinse with warm water, and ensure that the mild detergent solution

 

was thoroughly rinsed

 off. 

c.

 

Dry the Gas Oven

 

surfaces thoroughly with a dry cloth or paper towel, and polish with a

 soft dry cloth. 

g.

 

Cover the griddle plate with G/N pans if you are going to leave it overnight. 

NOTE:

 

Do not splash cold water or put ice on the griddle plate while it is hot as warping and

 stress cracks might occur, and this will shorten the life of your griddle.
