Seasoning of the griddle plate (only for GL174 models)
1.
Turn ON the griddle and heat to low temperature of about 150°C-180°C (or about 300°F-
350°F).
2.
Then, pour a small amount of cooking oil, about one ounce or 30cc per square foot of griddle
surface.
3.
Spread the oil over the entire griddle surface with a spatula to create a thin film. Wipe off any
excess oil with a dry paper towel.
4.
Repeat this procedure 2 to 3 times until the griddle plate has a slick, mirror-like image.

Pre-heating of the griddle plate before cooking (only for GL174 models)
1.
It is a best practice to pre-heat your griddle plate 15-20 minutes before your actual cooking.
This will act as your seasoning of the griddle plate and will possibly lengthen the life of your
griddle plate.
2.
Turn ON the burners and set to low flame.
3.
Then, pour a small amount of cooking oil, about one ounce or 30cc per square foot of griddle
surface.

Spread the oil over the entire griddle surface with a spatula to create a thin film.

Main burner air supply adjustment:
1.
For efficient burner operation, a proper balance of gas volume and primary air supply must be
maintained which will result in complete combustion. Insufficient air supply results in a yellow
streaming flame. Primary air supply is controlled by an air shutter on the front of the burner.
2.
For open burners, loosen the lock screw and adjust the air shutter to just eliminate the yellow
tips of the burner flame. Lock the air shutter in place by tightening the screw. Follow the air
default setting on the “Gas Specification Table” on Page 5 of this manual.
3.
For U-burners, loosen the lock screw and adjust the air shutter to just eliminate the yellow
tips of the burner flame. Lock the air shutter in place by tightening the screw. Follow the air
default setting on the “Gas Specification Table” on Page 5 of this manual.
