PART 1 – INSTALLATION

GENERAL INSTRUCTIONS

The Manufacturer declines any responsibility for damage caused by improper or incorrect

installation or maintenance of the appliance, or failure to observe safety regulations!
The appliance must be installed by a qualified technician according to the regulations and
directives in force in the country of use following the instructions in this manual. This appliance
has been designed exclusively for the cooking of food.
Remove the appliance packaging as well as the protective plastic sheet. If necessary, remove
traces of glue with a suitable solvent. To dispose of the packaging, follow local directives.

When installing the appliance, the following regulations must be observed:

Applicable national laws in force.

Regional and/or local regulations, such as building codes.

Directives and regulations stipulated by the local gas & electricity supplier (if provided
for).

Accident prevention regulations in force.

Fire prevention regulations.

In order to correctly use the appliance, please respect the warnings below:

The appliance must never be left unattended when it is being used.

The appliance is designed for professional use and therefore should only be used by
qualified personnel.

Be careful when using the appliance because the cooking surfaces become very hot.

The appliance should be installed under an extractor hood so that cooking fumes can
be removed.

If the appliance is installed in line:

Respect a minimum distance of 80 mm between the appliance and any walls made of
flammable material, partitions, kitchen furniture or nearby equipment.

The surfaces in contact with the appliance must be covered with non-combustible
heat insulation material such as rock wool, glass wool or ceramic fibre.

The appliance, and especially the power cord (if provided for), must not be installed near
heat sources.

CONNECTION TO THE DISTRIBUTION NETWORK

 Appliance characteristics

The CP35G7 and CP4FG7 and CP4FG9 appliance is equipped with one burner and a gas
connection fitting. The CP70G7 and CP8FG7 and CP8FG9  appliance is equipped with two
burners and a gas connection fitting. The structure of the appliance and the burners are
made in stainless steel. All models are equipped with adjustable feet. The main gas pipe is
made in galvanised steel. The pipes between the shut-off cock and the burner are made of
copper. Before connecting the appliance, take note of the technical specifications required
for installation, specified on the data plate.

 Equipotential bonding

The appliance must be included in an equipotential bonding system. This connection is
made using a screw marked with the

symbol. (Please refer to the installation diagram)

 Gas connection and verification

The gas distribution network fitting meets ISO 228-1 and EN10226-1 standards and is
situated on the back of the machine.
The  CP35G7 and CP4FG7 and CP4FG9   models must be fixed to the floor using the
relevant bracket. (Please refer to the installation diagram, item “F” in fig.2)

 Warning

Install a shut-off cock in the line between the appliance and the gas distribution network.

After installing the appliance, check for any leaks in the fittings. Use non-corrosive
foam products, such as leak detection sprays, to identify any leaks.

When checking for leaks do not use naked flames!

The installer is asked to follow these instructions, otherwise the Manufacturer's
guarantee of continuous performance of the appliance and/or failures and/or injuries
will not be applied.

The manufacturer shall not be held responsible and the guarantee is void in the case
of damage caused by negligence in following the operating and installation
instructions or by improper use. The guarantee is void in the case of connections
which do not conform to the current standards and fire-fighting regulations in force.

 Connection to the water supply

The equipment must be supplied with drinking water at a pressure of at least 1.5 bar and
not higher than 3 bar.
Connect the water inlet pipe by first placing a water shut-off valve and a mechanical filter.

 Evacuation of combustion gases

We recommend installing the appliance in a well-ventilated environment, or under an extraction
hood in order to remove the fumes or vapours produced during cooking. Connection to a flue is
not necessary for the CP35G7 - CP4FG7 - CP4FG9 (type A1) appliance models, while the
connection is necessary for the CP70G7 - CP8FG7 - CP4FG9 (type A1, B21) models. We
recommend that the appliances are installed under an aspiration hood.

CONVERSION AND ADAPTATION

To convert the appliance to another type of gas, e.g. from natural gas to LPG, the nozzles of
the main burner, the by-pass and the pilot light have to be changed. All the nozzles are
marked with a number that indicates the diameter in 1/100 mm and are supplied in a bag.
After each conversion or adaptation, the appliance must undergo an operating test and the
supplementary plate must be updated according to the conversion or adaptation carried out.

 Warning

All appliance connection, installation, and maintenance operations must only be carried out
by qualified technicians and in compliance with all applicable regulations!

REPLACING THE NOZZLES AND ADJUSTING THE AIR

BURNER

Open the door and locate the burner.

Replace nozzle “U” (fig. 6) with a suitable one for the new type of gas, see the
"NOZZLES TABLE."

AIR ADJUSTMENT

Adjust screw "X" (fig. 6) on the air regulation bracket; move the bracket until the
distance indicated in the "NOZZLES TABLE" "H" is set.

Block the support bracket by tightening the fixing screw.

 Warning (ONLY CP_G7 MODELS)

If the appliance is used with G25.1 gas, replace the air control bracket with that shown in (fig. 7).

PILOT LIGHT

To replace the pilot light nozzle unscrew the closing nut and replace nozzle "D" (fig. 3)
with that indicated for the new type of gas in the "NOZZLES TABLE”.

Reassemble the closing nut.

MINIMUM

Remove knob "A" (fig.4), unscrew and replace or adjust the minimum by-pass nozzle
"Um" (fig.5) according to the indications provided in the "NOZZLES TABLE”.

Replace the knob.

 Warning

In the event of G30 , screw the minimum by-pass all the way.
