Gazpacho Blend

Tomatoes are a good source of vitamin C. They also provide useful amounts of vitamin A and
B6. Red peppers are an excellent source of vitamin C and beta carotene which the body converts
to vitamin A – important for healthy eyes, skin and immune system.

Ingredients
6 ripe tomatoes, quartered
1 red and 1 yellow pepper deseeded and roughly chopped.
3 spring onions, trimmed and roughly chopped
1 tbsp cider vinegar
half a clove garlic, peeled
6 ice cubes
freshly ground black pepper
extra virgin olive oil, fresh basil leaves and four Italian breadsticks, to serve (optional)
Method
Put the tomatoes, peppers, cucumber, onions, vinegar, garlic and ice cubes in the
Smoothie Maker
Blend on low for a few seconds and then switch to high and blend until smooth
Pour into glasses and season with a little ground black pepper.
Drizzle with a little olive oil.
Garnish with fresh basil leaves and add a breadstick to each glass just before serving,
if desired.
