Cucumber, Avocado and Mint Cooler

Avocados are an excellent source of vitamin E, which keeps the heart healthy and also contain 

naturally occurring plant chemicals that stimulate the production of collagen and so help promote 

a more youthful looking skin. They are also bursting with heart healthy fatty acids

Ingredients 

 

1 cucumber 

 

1 ripe avocado 

 

1 bunch fresh mint leaves (approx. 15g) 

 

400ml water 

 

4 ice cubes 

 

mint leaves, to serve 

 

Method 

 

Peel the cucumber and cut into chunky pieces 

 

Place in the Smoothie Maker 

 

Cut the avocado in half and remove the stone. Scoop out the flesh into the Smoothie 

Maker using a dessert spoon. 

 

Add the mint, water and ice cubes. 

 

Blend on low for a few seconds, and then switch to high and blend until smooth. 

 

Pour into tall glasses and garnish with mint leaves. 

 

Serve immediately
