1 head cauliflower, rinsed,
dried, and ends trimmed
1 Tbsp., plus ¼ cup good olive
oil, divided
1 clove garlic, minced
¼ - ⅓ cup Tarragon Dijon
Dressing (pg. 121)
DIRECTIONS:
Prepare the “rice” using the
baking method on page 32.
Add cooked “rice” to a large
bowl. Top with dressing, add
hazelnuts and black pepper,
and toss. Divide among four
bowls to serve.
