Proceed as follows:

Cover the rack with baking parch-
ment. Prepare the fruit, mushrooms or
herbs and space them out on the
parchment. Do not overload the rack
and only use one shelf level at a time
to ensure sufficient drying.

Place the grill pan / oven tray under-
neath to catch any drips of juice or
moisture.

Select Fan heat

Lower the pre-set temperature to be-
tween 40-80 °C (see chart).

Dry with the oven door closed.
If the food still feels slightly moist after
the drying period has finished in the
oven leave it to finish drying at room
temperature.
