Liquid ingredients
Liquid ingredients should be measured with a measuring cup or jug. The measuring cup should be
level when measuring. Clean the cup after measuring out oil and other similar substances before
measuring other ingredients.
Dry ingredients
Dry ingredients should be poured or spooned into the measuring jug and levelled, e.g. with a knife.
Do not tap or shake the jug, this will compact the contents. Small amounts of dry ingredients are
measured with a measuring scoop. Use level measures unless otherwise specified in the recipe.
Order in which ingredients are added
Unless otherwise specified the ingredients should be added in the following order: liquid ingredients,
egg, salt and powdered milk etc., flour, yeast/baking power. The flour should not be completely
moist. Yeast/baking powder should be put on dry flour and must not come into contact with salt.
Do not use perishable ingredients when baking with a long delay, such as eggs, fresh milk, fruit and
onions, etc.
