Chicken Risotto
Ingredients
30g butter
350g Arborio rice
300g chicken breast filleted, sliced
4 (metric) cups chicken stock (1L)
1 tbsp oil
1/3 cup pesto
1 onion, finely chopped
1/2 cup grated parmesan cheese
3 garlic cloves, finely chopped
50g fresh rocket leaves
Preparation
• Preheat the cooker, uncovered, for 2–3 minutes on the
Sear/Sauté
setting.
Sauté half the chicken in half the butter for 6–8 minutes until it is lightly
browned and cooked through. Remove and repeat with the rest of the
chicken, then set aside. Sauté the onion and garlic in the remaining butter
and oil until the onion is soft. Add the rice, mix well and saut
é until glossy.
• Press
the OFF | KEEP WARM button to cancel the program. Add the chicken
stock, close the lid and press the ON | MENU button to set the
Risotto
program. Keep the lid closed during cooking.
• When the cooker has switched to warm-keeping mode, stir through the
cooked chicken, pesto, parmesan and rocket leaves. Cover and leave for
5 minutes before serving.
Pea & Asparagus Risotto
Ingredients
1 tbsp oil
4 (metric) cups chicken stock (1L)
1 onion, finely chopped
1cup peas, fresh or frozen
3 garlic cloves, finely chopped
1 bunch asparagus, trimmed & sliced
350g Arborio rice
Juice and rind of half a lemon
1 cup dry white wine
Butter, salt & pepper to taste
Preparation
• Preheat the cooker, uncovered, for 2–3 minutes on the
Sear/Sauté
setting.
Sauté the onion and garlic in oil until soft. Add the rice, mix well and saut
é
until glossy. Add the wine and cook uncovered until all wine is absorbed.
• Press
the OFF | KEEP WARM button to cancel the program. Add the chicken
stock, close the lid and press the ON | MENU button to set the
Risotto
program. Keep the lid closed during cooking.
• When the cooker has switched to warm-keeping mode, stir through the peas,
asparagus and a knob of butter. Add lemon and seasoning before serving.
Ensure the stirring paddle is fitted in the pot when cooking risotto.
