Angle scale
The angle scale has two columns:
Column 1:
For double side grinding, indicated by .
This scale applies to all knives that are ground
symmetrically on both sides.
Column 2:
For single side grinding, indicated by .
This scale only applies if a steel plate is used on
the right side.
If a steel plate is not used, the grinding device
must be tilted at the appropriate angle (see
Chapter 7.3.1).
