Sweet Potato
and Chickpea Soup
Serves 4
400g sweet potato, 2cm pieces
420g can chickpeas, drained
400g can diced tomatoes
1 brown onion, diced
2 cloves garlic, minced
500ml vegetable stock
1 tsp salt
¼ cup mint leaves, finely chopped,
to serve
2 tbsp olive oil, to serve

Place the sweet potato, chickpeas,
tomatoes, onion, garlic, stock and salt
into the soup maker.
2.
Place the motor body/lid on to the
soup maker.
3.
Select the ‘SMOOTH’ soup setting and
then select the ‘START’ button.
4.
Serve soup with mint leaves and
2 teaspoons of olive oil each.
Pea and Mint Soup
Serves 4
250g frozen peas, thawed
400g potato, peeled, 2cm pieces
½ leek, thinly sliced
2 cloves garlic, minced
¼ cup mint leaves
1 tsp salt
700ml vegetable stock
1 lime, juice only, to serve
¼ cup Greek yoghurt, to serve
1.
Place the peas, potato, leek, garlic,
mint, salt and stock into the soup
maker.
2.
Place the motor body/lid on to the
soup maker.
3.
Select the ‘SMOOTH’ soup setting and
then select the ‘START’ button.
4.
Allow to cool and then place into the
fridge to chill. Serve with a squeeze of
lime and a dollop of Greek yoghurt.
