Chicken, Corn and Ginger Soup
Serves 4
450g corn kernels
250g chicken breast, thinly sliced
2 shallots, thinly sliced
1 tbsp ginger, minced
1 tbsp rice wine vinegar
2 tbsp soy sauce
1 tsp caster sugar
2 tsp salt
¼ tsp ground white pepper
840ml chicken stock
2 tsp sesame oil, to serve
1 bunch coriander, roughly chopped,
to serve

Place the corn, chicken, shallots,
ginger, vinegar, soy, sugar, salt,
pepper and stock into the soup
maker.
2.
Place the motor body/lid on to the
soup maker.
3.
Select the ‘CHUNKY’ soup setting and
then select the ‘START’ button.
4.
Stir through the sesame oil and
coriander and serve immediately.
Lamb Goulash Soup
Serves 4
2 tbsp olive oil
350g lamb rump steak
1 brown onion, diced
1 tbsp sweet paprika
1 tsp caraway seeds
300g potato, 2cm pieces
3 tbsp tomato paste
400g can diced tomatoes
100g baby flat mushrooms, halved
600ml beef stock
¼ cup roughly chopped parsley, to serve

In a frypan, heat the oil over a
medium heat and sear the lamb
for 2 minutes on each side. Remove
from the pan and slice into 2cm
pieces. Add the onion, paprika and
caraway seeds to the pan and sauté
for 2 minutes.

Place the lamb, onion, spices, potato,
tomato paste, tomatoes, mushrooms
and stock into the soup maker.
3.
Place the motor body/lid on to the
soup maker.
4.
Select the ‘CHUNKY’ soup setting
and then select the ‘START’ button.
5.
Serve soup with roughly
chopped parsley.
