Operating the Salamander
COOK Function
During the COOK function, the center overhead heating
element operate at 75% power and the two outside overhead
heating elements operate at full power. The intensity of the
temperature can be adjusted by raising or lowering the upper
housing or by using only one or two of the heating elements
instead of all three. The intensity of the heat that penetrates the
food decreases as the distance between the food and the
heating elements increases. Use the following procedure to
operate the salamander in the COOK function.
1. move the upper housing to the desired cooking height.
2. Touch the ON (I)/STaNDBY key to turn on the unit.
• The STaNDBY indicator light will go out.
• The display will flash showing the last COOK setting.
3. Touch the COOK/HOlD key to select the COOK function.
The COOK indicator light will illuminate.
4. Set the desired cooking time
using the SET slider key.
• Cooking time can be set from
1 second to 20 minutes.
5. Turn on the desired heating element(s).
• Touch the corresponding ElEmENT SElECTOR key to
activate the desired heating element(s). an element is
activated when its indicator light is illuminated.
6. Place food product onto the cooking grate.
7. Start the COOK cycle. The COOK cycle can be started one
of two different ways:
a. Press the STaRT/STOP key to energize the selected
elements and start the programmed timer setting. The
STaRT indicator light will illuminate and an audible “beep”
will sound to indicate the COOK cycle is in progress. The
display will show the remaining cycle time.
b. Push the food plate against the
plate detection bar. This will
trigger the plate detection
feature, and the unit will
automatically activate the
programmed timer setting. The
STaRT indicator light will illuminate to indicate the COOK
cycle is in progress, an audible “beep” will sound, and the
plate detection indicator will darken in the display.

Using the Plate Detection Bar
NOTE: The operator can adjust the timer setting and turn the
heating element(s) on or off at any time during operation
of the unit.
8. Stop the COOK cycle. The COOK cycle stops automatically
when time expires or can be stopped manually in one of
two different ways:
a. When time expires, three audible “beeps” will indicate
that the COOK cycle is complete. The element(s) will
turn off and the STOP indicator light will illuminate.
b. Touch the STaRT/STOP key
to stop the cycle. The
element(s) will turn off, the
STOP indicator light will
illuminate, and three audible “beeps” will sound.
c. Remove the food plate from the cooking grate, releasing
the plate detection bar. The element(s) will turn off, the
STOP indicator light will illuminate, three audible “beeps”
will sound, and the plate detection indicator in the
display will go out.
NOTE: Do not disable the operation of the plate detection bar
by blocking it in the “activated” position. Damage to the
unit will occur.
9. To continue to cook other foods, touch the STaRT/STOP
key to reset the unit and repeat the above steps.
10. When cooking is complete, touch the ON (I)/STaNDBY key
to turn off the unit. The STaNDBY indicator light will
illuminate and the display will go dark.
