SEASONING
YOUR GRIDDLE
The simple idea behind an initial seasoning is to coat the griddle with oil and then heat the oil
above its smoke point to polymerize the oil and create a bond with the griddle top. You will end
up with a dark coated surface that is easy to clean.
1. Preheat the griddle for 12 minutes on DUAL ZONES setting with the lid closed.
2. Apply a small amount of oil to the surface of the griddle top and spread it around with a cloth or
paper towel (use tongs or a metal spatula to hold the cloth or paper towel during application).
INITIAL GRIDDLE SEASONING
Your well-seasoned griddle should be shiny black and have a natural
non-stick cooking surface. The more you cook with and season your
griddle top, the darker, stick resistant, and shiny it will become.

DO NOT USE SOAP ON THE GRIDDLE
COOKING SURFACE.
This will destroy the
griddle’s seasoning.
Make sure to apply an even coating across the entire griddle
surface and inner walls until it reaches its “smoke point” and let it
continue to heat the griddle top until it stops smoking.
3. Repeat this process (Step 2) 4-5 times. Your griddle top will start
to turn shiny black.
4. This griddle seasoning procedure will take about 18-20 minutes.

shelves near the griddle. Aerosol containers
are particularly hazardous because they
can overheat and result in an explosion, fire,
severe personal injury, or death.
WARNING
• DO NOT
place oily or greasy towels near
the griddle unit as they can spontaneously
combust.
• NEVER APPLY COLD WATER ACROSS THE
WHOLE SURFACE OF A HOT GRIDDLE AT
ONCE.
This may cause warping.
• DO NOT
leave griddle unattended while
preheating or burning off food residue. If
griddle has not been regularly cleaned,
a grease fire can occur that may cause
serious injury or property damage.
