SECTION 1 - GENERAL DESCRIPTION.
The E4069EL andE4109EL are combination

atmospheric convection steam ovens. These units

may be used in three different modes:
Convection Mode
These units operate as normal forcedconvection

ovens. The fan draws air from the oven which is

passedover the elements surround

ing the fan.

The air is then recirculatedback into the oven around

the sides of the oven baffle.
Steam Mode
The units operate as forcedair steaming ovens.

Steam generatedby the boiler is circulatedaround

the oven by the fan.
For economic water usage, set the temperature

selector switch between 95

o

C and100

o

C on steam

mode. Setting the selector switch above 100

o

C will

not allow the boiler to switch On/Off with temperature

modulation thus greatly increasing water usage.

A temerature greater than 100

o

C cannot be achieved

in steam mode.
The oven temperature may also be controlled

between 30-100

o

C in this mode by controlling the

amount of steam injectedinto the oven cavity.
Combination Mode
This combines the benefits of steam andconvection

cooking. Oven is suppliedalternately with hot air and

steam. The benefit of low weight loss on steam is

combinedwith the benefits of convection cooking.
Hot air andsteam are circulatedat high speedto

provide even cooking.

SECTION 2 - CONTROLS and OPERATION.

CONTROLS.

CONTROLS.
The controls are mountedon a panel at the Oven RH

as detailed in Figure 1. These consist of:
Power On Indicator (Red)
This Indicates there is power to the unit.
Heat/Cool Switch
This control in Redposition allows the fan to operate

normally for cooking modes.
This control in Black position allows the fan to operate

when door is open and activates cool down facility.
On/Off Temperature selector switch
When knob is turnedfully anticlockwise, power to

oven controls is switchedoff.
When knob is turnedclockwise, power is fedto the

controls. The knob is then rotatedclockwise to select

the desired cooking temperature.
Oven On Indicator (Amber)
This Illuminates when oven elements are on in either

convection or combination cooking cycle.
