5.3.1 Initial cleaning
The hotplate must be cleaned after installation of the appliance.
5.3.2 Maintenance
FAGOR INDUSTRIAL recommends a service of all the operating components of the fry-top at least
once a year to check their condition and the correct operation of the appliance. This service must be
carried out by an OFFICIAL AND/OR AUTHORISED TECHNICAL SERVICE.
The replacement of any functional component that may affect the safety of either the appliance or
the user should be performed by an OFFICIAL AND/OR AUTHORISED TECHNICAL SERVICE,
using the appropriate original spare parts.
Always clean the machine correctly to prolong the service life of the machine.
Remove any waste from the machine and the grease collection drawer at the end of each
day.
Do not use abrasive, corrosive or acid products, chlorine-based detergents, solvents or
petrol derivatives to clean the machine.
Do not use pressurised water to clean the machine.
The hotplate should be cleaned at regular intervals.
Tips for cleaning the hotplate of your fry-top:
Hard chrome hotplate
o
While the hotplate is still hot, block the grease collection hole and pour on ice. Next
using a special spatula, remove any traces of dirt around the grease collection
opening. Pay special attention to ensure that the grease collection drawer does not
overflow.
Iron hotplate
o
Rub the surface of the hotplate with vinegar, lemon or any natural degreaser.
Once the hotplate has been cleaned, the whole surface should be dried. To ensure the
hotplate is thoroughly dry, turn on the fry-top.
To prevent the iron hotplates from rusting, the surface should be rubbed with a cloth
moistened with olive oil. This is not necessary but is recommendable for the Hard Chrome
hotplates.
5.3.3 Prolonged periods of no use
If the machine is kept out of service for a long period of time (holidays, temporary closure,…), please
observe the following:
Close the gas supply.
Clean the machine and the adjacent areas thoroughly.
Sprinkle a thin layer of edible oil on the stainless steel surfaces.
Switch off the mains power supply.
