Steamed Rice-Custard Cake
(Serikaya Beras)
Serves 8-10
Ingredients:
5 eggs
8 3/4 oz sugar
1 cup thick coconut milk
2 heaped tablespoons rice flour
juice of 4 pandan leaves (screwpine leaves)
or 1/2 teaspoon pandan essence
A few drops green colouring
1/4 teaspoon vanilla essence (optional)
pinch of salt

Mix the yeast with the warm water. Fold in the
flour, oil and salt.

Knead by hand or in a kneading bowl to obtain a
bread dough.

Leave to rise for one hour, and spread out by hand
to obtain a 1/2" thick round of dough, directly
in the tin, form a fold all around the edges. Leave
to stand for 30 min in a warm place (around 85°F )
away from draughts.

Pour a little olive oil on the round of dough.

Spread out part of the peeled, crushed tomatoes,
add salt and pepper. Add the diced ham, sliced
mushrooms and mozzarella, followed by the rest
of the tomatoes and the grated parmesan.

Season with salt, pepper and marjoram. Pour on
some more olive oil.

Cook at 400°F on the fourth shelf for 15 to 20 min
at the Convection heat cooking setting.
Note:
Ready-to-use bread dough can be purchased at
bakery stores.
Variation:
Anchovies and black olives may replace the ham
and mushrooms.

Beat the sugar and eggs together until sugar is
dissolved.

Add coconut milk.

Whisk in rice flour, pandan juice or essence, salt,
colouring and vanilla essence.

Strain mixture into greased sandwich tin.

Place on wire grid at level 3 and cook for 10
minutes using Max steam setting.

Strain mixture into greased sandwich tin.

Steam for another 20 minutes.
Allow cake to cool completely before turning out.
Cut into slices to serve.
