Lasagne Bolognese

Ingredients:
2 8 oz peeled tomatoes (tinned)
2 1/2 oz tomato concentrate
4 1/4 oz finely sliced onions
1 packet of lasagne
2 2/3 lbs minced beef
1 Qt of milk
30 oz flour
5 oz 1 oz for the dishes
10 1/2 oz gruyère
Majoram
Salt, pepper
Nutmeg

Sauté the peeled, washed and sliced onions in
butter; add the peeled tomatoes and tomato
concentrate.
Leave to simmer for 15 minutes.

During this time brown the beef with 30 oz of
butter and add the tomato sauce.

Prepare the white cream sauce; in a casserole melt
the butter, add the flour and mix well; then pour in
the milk, season with salt, pepper and nutmeg and
cook for several minutes.

Butter the dishes and pour in a little of the white
sauce, then a layer of lasagne, then tomato sauce
and gruyère.Then start again twice over.

Ingredients:
2 1/4 lbs potatoes
5 oz grated cheese
1 3/4 oz butter
7 oz milk
4 oz crème fraîche
1 clove garlic

Peel and slice the potatoes.

Beat the milk and cream to obtain a homogeneous
mixture.

Rub the dish with the clove of garlic and grease it
with part of the butter.

Fill the dish, alternating the layers of potatoes with
the grated cheese, a few knobs of butter, salt and
pepper.Top with cheese and knobs of butter.
