TEA BREWING RECOMMENDATIONS
GREEN TEA:
Green tea processing implies a minimum degree of im-
pact on tea leaves. Tea leaf is not subjected to oxida-
tion or fermentation. This allows the tea to preserve all
its bene
fi
cial properties.
The raw materials for green tea are the buds and fresh,
gentle leaves. Yielded tea leaf is dried to remove ex-
cess moisture and then subjected to thermal treatment
in special boilers at a low temperature to enhance its
fl
avor and aroma. The same heat treatment signi
fi
cant-
ly slows down the process of oxidation in the leaf and
the tea longer remains fresh and tasty.
Green tea has a tonic, invigorating and restorative ef-
fect on the body. It contains large amounts of vitamins
and minerals, improves metabolism, lowers choles-
terol, has disinfectant properties, and helps to reduce
weight.
Brewing recommendations:
• water temperature is 70 degrees;
• leave for 10–30 seconds;
• tea can be brewed 4–7 times depending on how
much tea you put, and how strong you prefer;
• it is advisable to drink the tea at once, as long as it
is fresh and warm. Do not leave the tea leaf in water
for a long period of time and do not use “yesterday’s
brew.”
WHITE TEA:
White tea leaf undergoes minimal mechanical and
thermal treatment (the degree of leaf oxidation is just
5–7%). For the production of white tea, depending
on the variety, there are selected virgin buds (tips) or
fl
ushes (two leaves and a bud). The peculiarity of the
raw material processing is that it is only aired off in the
sun and dried, without further heat treatment and twist-
ing. And tea leaf retains its natural shape. All the pro-
cesses are done by hand, and the experience of a tea
master is very important get soft and balanced taste.
White tea has a pleasant cooling effect on the body,
so it is especially good to drink in the summer. It is be-
lieved that white tea possesses therapeutic properties,
lowers the blood sugar level, and may be used as an
antipyretic agent. White tea has a mild, sweet
fl
avor
and delicate aroma.
Brewing recommendations:
• water temperature is 80 degrees;
• leave for 20–60 seconds;
• tea can be brewed 4–5 times depending on how
much tea you put, and how strong you prefer;
• it is advisable to drink the tea at once, as long as it
is fresh and warm. Do not leave the tea leaf in water
for a long period of time and do not use “yesterday’s
brew.”

from 35% to 80%. The variety of types,
fl
avors and aro-
mas is striking. For the manufacture of oolongs there
are used large whole leaves. The color of the
fi
nal
product varies from gray–green to dark brown. Oolong
manufacturing technology is complex and consists of
