SIMPLE TOMATO SAUCE
Makes about 5 cups

tablespoon olive oil
4
garlic cloves, finely chopped
1
small onion, finely chopped
¾
teaspoon dried oregano
½
teaspoon kosher salt
¼
teaspoon freshly ground black pepper
¼
cup dry white wine
3
pounds plum tomatoes (about 12 whole),
pressed*

sprigs fresh basil
¼ to ½ teaspoon crushed red pepper (optional)
1 to 2 tablespoons granulated sugar (optional)
Put the oil into a large saucepan set over
medium-low heat. Once hot, add the garlic,
onion, oregano, salt and pepper. Sauté until
garlic is fragrant and onion is softened.
Add the wine and stir to combine. Allow to
cook down slightly, about 3 to 5 minutes. Add
the tomatoes (pressed in the Cuisinart Fruit
& Vegetable Press), basil and red pepper (if
using). Bring to a boil and then reduce to a sim-
mer, cover slightly and allow to cook for about
40 minutes, longer if a thicker sauce is desired.
Remove the basil sprigs and discard. Taste and
add sugar as needed (this will depend on the
flavor of the tomatoes that you are using. You
may not need any sugar if your tomatoes are in
peak season).
*If blanching, coring and peeling first, the yield
may be slightly less than 5 cups.
TOMATO SOUP
Makes about 6 cups

medium celery stalk, chopped

bay leaf

teaspoon kosher salt
Pinch freshly ground black pepper

pressed*

cups chicken or vegetable stock

Parmesan rind (optional)
Put the oil into a stockpot set over medium-low
heat. Once hot, add the garlic, onion, carrot, cel-
ery, spices, bay leaf, salt and pepper. Sauté until
vegetables are softened.
Add the tomatoes (pressed in the Cuisinart Fruit
& Vegetable Press) and stir to combine. Add
the stock and Parmesan rind. Bring to a boil
and then reduce to a simmer, cover slightly, and
allow to cook for about 1 hour.
Remove Parmesan rind and bay leaf. Using an
immersion blender or transferring to a counter-
top blender, blend (in batches) until smooth.
Taste and adjust seasonings as desired.
*If blanching, coring and peeling first, the yield
may be slightly less than 6 cups.
RASPBERRY SAUCE
Makes about 1 cup

12 ounce bag frozen raspberries, thawed
(about 2½ cups), pressed*
2 to 3 tablespoons granulated sugar (depend-
ing on sweetness preference)
Pinch sea salt
Pinch orange zest
Put all of the ingredients into a small mixing
bowl. Whisk together to combine well. Taste and
adjust sugar amount to personal preference.
*Only process raspberries through the press
once.
