GENERAL OPERATION
The appliance floor temperature is displayed on the controller readout.
1. Turning on the appliance
Push I/O button and turn the radiant flame to its highest setting. To set the appliance to turn on automatically
using the programmable timer, see the programming section of this manual.
2. Heat-up
The appliance should reach cooking temperatures of 550–575 °F in 3 to 3-1/2 hours. Use the Flame Height
Control Knob to control the amount of heat in the appliance. If the appliance is still warm from the previous
day, push the I/O button and turn the radiant flame to its highest setting (#5). The appliance should reach
500–550 °F within 1-1/2 to 2 hours. See woodstonehome.com for recipes and additional detailed information
on cooking in your Wood Stone Bistro.
The optional perforated stainless steel Heat Efficiency Door may be used to speed the heat-up process. To
use the Heat Efficiency Door, open the glass doors (if equipped), and place it into the doorway so it is right
up against the oven arches, making sure to leave the glass doors (if equipped) open. Push the I/O button and
using the Flame Height Control Knob, adjust the radiant burner to its highest setting (#5 with the dial pointer).
Once the desired temperature is reached, carefully remove the Heat Efficiency Door. CAUTION: the handles
will be cool, but the rest of the door will be HOT. Place the door in a safe area while it cools. Adjust the flame
height down to a point that holds your oven at your desired cooking temperature (approximately #3). Always
remove the Heat Efficiency Door once the appliance reaches temperature. If the unit is allowed to run with the
Heat Efficiency Door in place after reaching temperature, it will continue to heat and eventually reach its 850 °F
temperature limit and automatically shut down. If it does this, turn the oven off, then carefully remove the Heat
Efficiency Door and allow the oven to cool. Once the oven deck has cooled to below 850 °F, the oven can then
be restarted. With use, you will see some warpage and discoloration of the Heat Efficiency Door. This is normal.
3. Turning off the appliance
Push I/O button, all gas will go off, even the pilot. You may place the Heat Efficiency Door into the opening to
help retain heat in the oven.
