
Sheet pans, on L-rails (bakery model)
The following figure shows how to set up a full-size sheet pan (18" x 26") and two half-size sheet pans (13" x 18") on L-rails
(bakery model) in a rack in UL models:
Placement rules
■
The sheet pan must be slid all the way in on top of the L-
rails (1).
■
The sheet pan must be slid in at the same height on both
sides.
■
Do not put liquids or food that will become liquefied during
cooking in the sheet pan.
■
The method shown is intended exclusively for sheet pans
(and, if applicable, oven racks), NOT for bakeware.
■
Do not place bakeware on top of sheet pan.
