Spicy Adobo Drumsticks 2 Ways: Roasted / Air Fried
Makes: 4-5 chicken drumsticks
Serves 4 to 6
Brine
•
6 cups water
•
1/4 cup sugar
•
1/2 cup Kosher salt
Rub
•
4 tablespoons Adobo
•
1 tablespoon Chile de Arbol,
ground (to taste)
•
1 tablespoon paprika
Breading
•
4 eggs
•
2 cup panko breadcrumbs
•
3-4 green onions, chopped
•
1 1/2 tablespoon Adobo seasoning
•
spray with olive oil
1.
Brine chicken for 3 hours to overnight

Remove chicken from brine and dry thoroughly.
3.
Combine rub ingredients on a plate, mix well, roll, then pat chicken legs with rub.
4.
Cover and refrigerate for 3 to 4 hours.
