Acrylamide in food

In accordance with Regulation (EU) 2017/2158 to define minimisation measures and guide values for lowering
the acrylamide content in food, the temperature in manual and intelligent cooking paths in which frying is carried
out is preset to 175 °C. As a manufacturer, RATIONAL guarantees that the set temperature is maintained to the
exact degree and does not exceed its set point.

Depending on the product, the temperature can be below 175 °C to reduce the acrylamide content. Please take
suitable measures in your company to ensure compliance with the acrylamide limit values.

You can increase the temperature of the oil or fat to 180 °C at your own risk.
