Frying
6.5.1
General safety instructions

This will prevent scalding and burns:
– Wear personal protective equipment to prevent burns and scalding.
– Adhere to the minimum and maximum fill levels in the pan.
– Make sure that the pan seal is dry before you start frying.
– Make sure that the core temperature probe is dry before you start frying.
– Do not fill large quantities of moist food in hot oil or fat. Moist food, like for
example frozen foods, favour the foaming of the oil or fat.
– Allow hot oil or fat to cool completely before removing it from the pan.

This will prevent fire hazards:
– Observe the permissible fill level in the pan and do not exceed it.
– Never pour water into hot oil or fat.
– Remove food residue and contaminants in oil or fat on a regular basis.
– Check the quality of the oil or fat before frying.
– Change the oil or fat regularly. Old oil or fat is highly flammable and tends to
foam over.

This will prevent material damage, injury or fatal accidents:
– Never extinguish burning oil or fat with water.
6.5.2
Limited functionality
For your own safety, the following functions are not available when you are cooking food:
Automatic water refill
The following symbol is displayed while you cook food:
You can only fill the pan with the automatic water filling function once you have completely lifted the pan and
removed the oil or fat.
Open pan valve
Never open the pan valve when you are cooking food. A warning signal sounds and you are asked to close the pan
valve.

If you preheat oil or fat with the pan lid closed, the oil or fat is preheated to a maximum of 150 °C. Please note the

6.5.4
Filling and emptying the pan oil or fat
Use the oil cart to easily fill and empty the pan with oil or fat. Using the oil cart, you can pump oil or fat into the
pan at a maximum temperature of 180 °C. After frying, you can pour the oil or fat back into the oil cart.
