Roast ham
Serves 6
1000 g ham joint
Salt, pepper and paprika
1 tsp mustard
30 g butter or margarine
100 ml double cream or crème fraîche
250-750 ml stock or water
Corn flour
Method:
1. Season the meat with salt, pepper
and paprika, and spread over the
mustard. Dot with butter, place in a
roasting pan, cover and cook for about
30 minutes.
2. Add the cream or crème fraîche and
the stock or water and continue to roast
without the lid until done.
3. When ready, transfer the meat to a
serving dish. Add water to the juices in
the pan and thicken with corn flour.
Carve the meat, and serve with the
gravy.

When using a roast probe, set the
temperature to 75-80°C.
