3.2.2 Cooking surfaces

• Plate with steel burner controlled by a valve equipped with safety thermocouple
and piezoelectric pilot flame ignition ;
• temperature on the solid top adjustable from 50°C to 500°C (122°F to 932°F);
• unit with 2 or 4 stabilised-flame gas burners made of nickel-plated cast iron and
controlled by pilot flames;
• burner type:double-crown burner rated 3.5 kW (item 1 in Fig. 1) double-crown
burner rated 5.6 kW (item 2 in Fig. 1);
• valves equipped with safety thermocouples to ensure that gas flow will be imme-
diately shut off in case of failures or if the burner is accidentally extinguished;
• two-burner acid-resistant black enamelled cast-iron grates;
• stainless steel drip pans.
3.2.3 Gas ovens
• Stainless steel GN 2/1 static oven with temperature adjustable from 80°C to 300°C
(176°F to 572°F);
• tubular steel burner rated 7.9 kW (item 3 in Fig. 1) with self-stabilising flame;
• piezoelectric ignition of pilot flame;

safety valve fitted with thermocouple ensures that gas flow will be immediately
shut off in the event that a burner is extinguished accidentally or a failure occurs;
• wire shelf support with two loading positions and a device to prevent tipping;
• removable, high-radiance, ribbed cast-iron bottom plates;
• silicone rubber oven door gasket, easily replaceable.
