NOTE:
You can also use you own favourite waffle recipe, or use a
ready-made waffle mixture.
Perfect Bubble Waffles (approx. 5 waffles)
• 6 egg whites, beaten to medium peaks
• 3 egg yolks
• 1.8 dl milk
• 15 ml vanilla extract
• 0.9 dl unsalted butter, melted
• 1.8 dl sugar
• 3 dl all-purpose flour
• 50 ml baking powder
• 0.5 ml salt
• Pinch of freshly grated nutmeg
In a bowl, whisk together egg yolks, milk, vanilla, butter and sugar
until it combines. In a large bowl sift together the flour, baking powder,
nutmeg and salt. Whisk the egg yolk mixture into the flour mixture
until well combined and no lumps remain. Add one-third of the beaten
egg whites into the batter and stir until lightened. Gently fold in the
remaining egg whites in two additions.
Pre-heat the Waffle Maker and pour the batter evenly over the bottom
plate. Bake for 3 to 5 minutes or until the waffle turns a golden brown.
Buttermilk Waffles
• 4 large eggs, separated
• 30 ml sugar
• 1.2 dl butter, melted and cooled
• 10 ml baking soda
• 6 dl all-purpose flour
• 5 ml salt
• 4.7 dl buttermilk
• 12 ml baking powder
Beat egg yolks and sugar until light and foamy. Add the cooled melted
butter, buttermilk and vanilla extract. Sift flour, baking soda and
baking powder and add it to the egg mixture. Add salt and beat well
together. Beat egg whites until stiff and then carefully fold into flour
mixture.
Pre-heat the Waffle Maker and pour the batter evenly over the bottom
plate. Bake for 3 to 5 minutes or until the waffle turns a golden brown.
Chocolate Waffles
• 2 large eggs
• 2.3 dl sugar
• 7 ml vanilla extract
• 2.3 dl milk
• 55 grams unsweetened chocolate
• 3.5 dl all-purpose flour
• 2.5 ml Teaspoon salt
• 1.2 dl butter or margarine
• 10 ml baking powder
• 2.5 ml cinnamon powder
In a small pan, melt the butter or margarine with the chocolate (be
careful not to burn the chocolate). Allow the melted chocolate to cool.
Beat the eggs until fluffy in a mixing bowl and combine with melted
chocolate, milk and vanilla. Add sugar, flour, salt and baking powder,
and beat until the batter is smooth.
Pre-heat the Waffle Maker and pour the batter evenly over the bottom
plate. Bake for 3 to 5 minutes or until the waffle turns a golden brown.
