French Onion Soup
Serves 4
1 tbsp olive oil
50g butter
5 onions (about 900g), thinly sliced
1 tbsp brown sugar
750ml chicken stock
1 tbsp balsamic vinegar
2 bay leaves
2 thyme sprigs
4 pieces fresh bread, to serve
1.
In a saucepan, heat the butter and
oil. Add the onion and sauté until
golden brown.

Place the onions, sugar, stock,
vinegar, bay leaves and thyme into
the soup maker.
3.
Place the motor body/lid on to the
soup maker.
4.
Select the ‘CHUNKY’ soup setting and
then select the ‘START’ button.
5.
Serve soup with fresh bread.
Smoked Ham
and Split Pea Soup
Serves 4
200g dried green split peas, washed
250ml boiling water, to soak the beans
250ml boiling water
2 eschallots, diced
1 clove garlic, minced
200g ham off the bone, roughly chopped
1 bay leaf
2 sprigs thyme
2 carrots, peeled, diced
2 stalks celery, diced
1 tsp black peppercorns
1/2 cup white wine
500ml vegetable stock
¼ cup roughly chopped parsley, to serve
4 slices sour dough, to serve

In a heatproof bowl, add the split
peas and boiling water and allow to
stand for 30 minutes, then drain.
2.
Place the split peas, water, eschallots,
garlic, ham, bay leaf, thyme, carrot,
celery, peppercorns, white wine and
stock into the soup maker.
3.
Place the motor body/lid on to the
soup maker.
4.
Select the ‘CHUNKY’ soup setting and
then select the ‘START’ button.
5.
Serve soup with chopped parsley and
sour dough bread.
NOTE:
Use the ‘PULSE’ setting if
desired when ‘CHUNKY’ setting
is complete to chop ingredients
for a less chunky result.
