J. Close the lid to raise the head and divide the dough.

Dividing-moulding operating procedure (fig.10, 11)
A. Twist the mushroom (emergency stop) button (fig.3, n°16) ¼ turn to the right if it has not been
released.
B. Press the green button if it flashes to initialise the machine.
C. Open the lid.
D. Choose the position of the head (half tank or full tank) using the selector on the front.
E. Place the coarse tamping plate in the bottom of the tank.
F. Lightly flour the top of the tamping plate using Easyflour.
G. Empty the dough into the tank and spread it around roughly by hand.
H. Lightly flour the top of the dough using Easyflour.
I. You can adjust the tamping pressure using the pressure setting handle located on the front
and the tamping time using the button on the front.
J. Close the lid to raise the head and tamp the dough.
K. When the indicator lights up again, open the lid.
L. Close the frame to raise the head and divide the dough.
M. When the indicator lights up again, open the frame.
N. Collect the dough pieces.

Easyflour flour dispenser filling procedure (fig.12)
A. Open the flour dispenser lid.
B. Empty the flour in the flour dispenser filling area (fig.12,n°25)
C. Close the flour dispenser lid.
D. Set the flour dispenser flow rate using a cursor (fig.12,n°26).
8 MAINTENANCE
8.1 Daily, by a trained operator.
A. Place the head and the knives in the lowered position and clean the tank and clean the lid.
B. Press the knife raise button to raise and clean the knives.
C. Press the green button to raise the head and clean out dough and flour residues with a
vacuum cleaner.
8.2 Weekly, by a trained operator.
A. Wash the entire body with a damp cloth.
B. Press the knife raise button to raise the knives.
C. Activate the emergency stop and remove the side doors using a screwdriver.
D. Using a vacuum cleaner, clean all over the inside of the machine as well as the mechanical
components.
E. Refit the side doors and empty the flour recovery bin.
8.3 Six-monthly, by an approved agent.
