It prevents the batch inside the tank from getting in contact with dust and guarantee a

They allow dispensing the ice cream: if pushbutton production

is on, press

pushbutton START for starting the machine; pull downwards the lever for a few seconds;

this way the dispensed product has surely reached the ideal consistency
