2.2. CONNECTION TO WATERWORKS
−
The appliance is equipped with a mixing tap to fill the cooking vat with water.
−
Install a cut-off valve on the line before the appliance.
−
Water inlet pressure must be between 50 and 300 kPa, otherwise install a pressure regulator on the line
before the appliance.
−
Water connections are on the lower right-hand side of the appliance.
2.3. STEAM CONNECTION
Warning! :
during operation, steam pressure at inlet can reach a maximum pressure of 0,45 bar.

Installation shall be performed only by qualified personnel in conformity with current regulations.
−
For the maximum efficiency, deliver dry steam with a maximum pressure of 0,45 bar into the steamers.
−
Water and steam inlet piping shall be connected to the supply system by means of an on-off valve when
the steamer is not being used or in case of servicing. On-off valves must be installed near the appliance
and be easily within the user’s reach.
−
Before connecting the last piece of piping to the steamer connections, it is advisable to let some water
and steam to flow through them to eliminate any iron residues from inside.
−
All the steam supply piping shall be insulated to prevent heat dispersion.
2.4. STEAM TRAP
−
Install a steam trap on the kettles.
−
The ¾” connections is fitted in the lower central part of the kettle (Mod. 50lt. – 100lt. – 150lt.).
−
The 1¼” connections is fitted in the lower central part of the kettle (Mod. 200lt. – 300lt. – 500lt.- 170lt. –
270lt. – 370lt.).
−
This device drains automatically any condensate that develops in the jacket.
−
A nonreturn valve must be installed if the condensate returns to the steam boiler. The maximum back
pressure admitted is 0,2 bar.
2.5. COMMISSIONING AND MAINTENANCE OF THE APPLIANCE

Once all the connections have been made, the appliance and the overall installation must be checked
following the directions given in this manual.

Check in particular:
−
that connections have been made in accordance with the requirements and directions indicated in
this manual;
−
that all safety requirements in current standards, statutory regulations and directives have been met;
−
that the steam and water connections are leak-free;
−
that the steam trap is unobstructed.
−
Now proceed to light the appliance as directed in the instructions for use.
−
The test report must be completed in full and submitted to the customer who should then sign in
acceptance. With effect from this moment, the appliance is covered by the manufacturer’s warranty.
−
To ensure correct and safe operation, the appliance must be inspected and serviced at least once a year
only. Maintenance includes also to control the components and tear of pipes, feeding pipes etc..
