6.1.2 While Cooking
Never leave hot cooking liquids unattended.
Cooking oil or grease can ignite when the
temperature reaches the ignition point.
Keep the floor clean and dry. Immediately
clean up spilled oil. An oily or wet floor
can cause slips and falls.
Wear appropriate footwear that is closed toe and
slip resistant.
It will take approximately 20 to 30 minutes to
preheat cooking oil. Carefully control the
cooking oil or grease temperature between 325° F
to 350° F during preheating or cooking process.
Hot oil or grease can ignite.
If the temperature of the cooking oil exceeds
350° F (177° C), or if oil begins to smoke,
immediately turn OFF the burner and wait for the
temperature to decrease to 350° F (177° C) or less
before relighting.
When cooking with oil or grease, a thermometer
MUST be used to prevent overheating of the oil.
Always completely thaw and towel dry food before
placing it in the appliance. Introduction of water or
ice, especially from frozen or thawed food products, into
the oil/grease may cause overflow and severe burns from
hot oil and steam.
Use extreme care when lowering food into hot cook-
ing liquid. Never drop or throw food or accessories
into hot cooking liquid. Slowly lower food or accessories into
the cooking liquid in order to prevent splashing or overflow.
Carefully remove food from the appliance to prevent
burns from hot cooking liquids.
Do not place an empty cooking container on a lit
burner. Empty aluminum cooking containers will
melt if placed over a lit burner.
Discard any cooking vessel that may be pitted with
holes that could allow cooking oil to leak onto the open
flame of the burner. Leaking oil will ignite and cause a fire.
Never use a cooking container larger than the ca-
pacity of the appliance.
