Suitable milk types
The amount of milk required is 1 litre. It is possible to use any type of milk, although it must be pas-
teurised, i.e., heated to 70-80°C (not above!), so that the live yogurt culture can develop without being
damaged by other bacteria that are normally found in milk.
In any case, it is possible to use milk either at room temperature or from the fridge. The simplest
method is to use UHT milk (sterilised at high temperature), which is already pasteurised.
UHT milk is a guarantee of good yogurt results, as long as the additional yogurt used contains a high
level of live Lactobacillus Bulgaricus.
When using for the first time and even later, make sure that – according to the pack information – the
yogurt contains live Lactobacillus Bulgaricus.
