Gingerbread White Chocolate Blondies
Makes: 4 batches
2 ¾ cups plain flour
1 ½ teaspoons baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
1 ½ teaspoons ground ginger
½ teaspoon ground cloves
280g butter, room temperature
¾ cup brown sugar
¼ cup caster sugar
2 eggs
¹⁄³ cup molasses
300g white chocolate chips
1. Preheat brownie maker. Lightly coat plates
with non-stick cooking spray.
2. In a large bowl sift flour, baking soda, salt,
cinnamon, ginger and cloves together.
3. Using an electric mixer beat butter and
sugars together until light and fluffy.
4. Add eggs making sure to beat well between
each addition. Add molasses and beat until
combined.
5. Gently fold through flour mixture and
chocolate chips. Stir until just combined.
6. Pour 1 cup of batter into brownie maker.
Cook for 10-12 minutes or until cooked.
Repeat with remaining batter. Serve warm
or cold.
