Cheesecake Brownies
Makes: 3 batches
300g dark chocolate, chopped
150g butter, cubed
3 eggs
1 cup caster sugar
1 ½ cups plain flour
¹⁄³ cup sour cream
250g cream cheese, room temperature
1. Preheat brownie maker. Lightly coat plates
with non-stick cooking spray.
2. Place chocolate and butter in a bowl.
Microwave for 20 second intervals until
butter and chocolate is fully melted and
smooth.
3. Add 1 egg and ¼ cup of sugar to the
chocolate mixture and stir until combined.
Gently fold through flour and sour cream.
4. Using an electric mixer beat cream cheese
and remaining sugar until smooth. Add
remaining eggs and mix until combined.
5. Pour ½ cup of chocolate mixture into the
base of the brownie maker. Add ½ cup of
cream cheese mixture and create swirls
with a wooden skewer. Cook for 10-12
minutes or until cooked. Repeat with
remaining batter. Serve warm or cold.
Peanut Butter Swirl Brownies
Makes: 3 batches
115g butter, cubed
200g dark chocolate, chopped
¾ cup caster sugar
2 teaspoons vanilla essence
3 eggs
²⁄³ cup plain flour
½ teaspoon baking powder
¾ cup smooth peanut butter, room
temperature
½ cup icing sugar
80g butter, melted
1. Preheat brownie maker. Lightly coat plates
with non-stick cooking spray.
2. Place butter and chocolate in a bowl.
Microwave for 20 second intervals until
butter and chocolate is fully melted and
smooth.
3. Whisk sugar, vanilla and eggs into the
chocolate mixture.
4. In a separate bowl combine flour and
baking powder. Pour liquid ingredients into
dry ingredients and stir to combine.
5. In a small bowl combine peanut butter,
icing sugar and butter. Stir to combine.
6. Place ¾ cup mixture in the brownie maker.
Add ¼ cup of peanut butter mixture and
create swirls with a wooden skewer. Cook
for 10-12 minutes or until cooked. Repeat
with remaining batter. Serve warm or cold.
