7. Add baby spinach and yoghurt to the curry.
Season with salt and pepper.
8. Serve curry with basmati rice and tzatziki.
Treacle and Ginger Pudding
160g butter, room temperature
²⁄³ cup brown sugar
4 eggs
2 cups self-raising flour
1 tbsp grated ginger
1 tbsp ground ginger
Cream or ice cream, to serve
1. Grease an 8 cup capacity pudding dish
with butter.
2. Place a heat proof bowl in the base of the
pot. Half fill the pot with water. Heat on
setting 3.
3. Using an electric mixer beater butter and
sugar until light and creamy.
4. Add eggs, one at a time, until mixture is
pale.
5. Gently stir through the remaining
ingredients.
6. Pour mixture into prepared dish. Place a
piece of greased baking paper over the
pudding. Secure the pudding lid.
7. Place the pudding into the pot. Add
more water until ¾ of the pudding pan is
submerged. Cook for 3 hours until a skewer
comes out clean when tested.
8. Turn the pudding out onto a serving dish.
Serve hot with cream or ice cream.
Date and Apricot Christmas Steamed Pudding
1¼ cups dates
1¼ cups dried apricots
1 cup mixed fruits
½ cup raisins
¹⁄³ cup cognac
1 cup water
¾ cup brown sugar
2 cups plain flour
1 tsp baking powder
1 tsp bicarbonate soda
1 tsp ground cinnamon
½ tsp ground ginger
½ tsp ground nutmeg
120g butter, melted
2 eggs
Custard, to serve
1. Grease an 8 cup capacity pudding dish.
2. Combine dates, apricots, oranges, raisins,
lemon and cognac. Set aside.
3. Place water and sugar in the pot. Bring to
a simmer on setting 5.
4. Sift together flour, baking powder, baking
soda, cinnamon, ginger and nutmeg.
5. In a large bowl combine butter, sugar
mixture and soaked dried fruits. Stir to
combine.
6. Add flour and stir to combine.
7. Pour into prepared dish. Cover with a layer
of greased foil.
8. Place a plate in the base of the pot.
Place the pudding on the plate. Fill with
enough water to cover three quarters of the
pudding dish. Cover pot with the lid.
9. Place on setting 3. Simmer for 4½ hours.
Top the pan up with water if necessary.
10. Turn the pudding out onto a serving dish.
Serve hot with cream or ice cream.
